Slaw is pretty basic these days. It doesn’t take much to shred some greens and marinate them in acid – sounds like a Batman villain, now that I think of it. Nevertheless, the light flavor compliments just about everything and adds some color to the plate. Here’s to the dark side…


Yields 4 servings



1/4 head cabbage

Head of radicchio

2 carrots

2 cloves garlic

1″ ginger

Juice of 2 limes

1T soy sauce

Mint, for garnish

Cilantro, for garnish

Basil, for garnish



Thinly slice cabbage and radicchio, and place in a large mixing bowl. Peel and grate carrots; add them to the mixing bowl. Set aside.


In a separate mixing bowl, microplane garlic and ginger. Whisk in lime juice and soy sauce. Dress the slaw and toss until evenly coated. Garnish with herbs.
