Bright Green Pea Gazpacho


Keep it clean. Keep it green. Keep it tight. 



2c english peas, shelled

1 cucumber, diced

1/4c extra virgin olive oil

2T red wine vinegar

1c water

Salt & pepper

1/4c pea shoots, for garnish



Combine English peas, cucumber, water and mint in blender. Blitz. With the blender running, stream in olive oil and vinegar. Scrape down the sides of the blender and resume blending until smooth. Season with salt and pepper.


Pour into 4 bowls and garnish with pea shoots.
