Fried Eggs over Sautéed Brussels Sprouts & Bacon


1 T Grapeseed oil

2 Slices of thick cut bacon, julienned

1 Shallot, manicured

Pinch of crushed red pepper

8 Brussels sprouts, thinly sliced

Zest of one lemon

Juice of one lemon

1 T butter 

2 eggs


Heat medium skillet over medium heat. Add oil and bacon and cook until fat is rendered and almost crisp. Add shallot and red pepper. Sweat with a pinch of salt. Add Brussels sprouts, zest and juice. Sautee until slightly wilted. Remove from heat and plate in center of dish.


Return pan to heat. Add butter. Fry eggs and season with salt and pepper. Serve over Brussels sprouts.
