Peaches & Broc

There’s nothing fancy about this salad – and that’s the beauty of it. Quick roasted broccolini and peaches make a perfect summer dish. Of course, plating can elevate tasty to stunning. #looksareeverything


Yields 4 servings



1 peach

1 bunch broccolini

1 clove garlic

1T olive oil

Salt & pepper

1/4 cup mint, for garnish




Preheat oven to 450F.


Slice peach in 12 wedges and arrange on a parchment lined sheet tray. Clean broccolini so that each piece is 3″ long. Place on same sheet tray as peaches.


In a small mixing bowl, microplane garlic and combine with olive oil. Season with salt and pepper. Drizzle garlic mixture over broccolini. Roast for 5 minutes.


Remove peaches and broccolini from oven and cool for for 10 minutes. Arrange on plates. Garnish with mint leaves (only the small ones – NO WIRE HANGERS).
